Cookie Heaven!

Well, I was going to post about my garden-until last night when I made these delectable Margarita cookies.

I was searching online for margarita flavored or inspired treats for a birthday gift and I ran across several promising recipes. Then this one just popped for me. Not a lot of ingredients, most of which I already had. We have been fortunate to get some great citrus lately and I always zest the fruit before eating, storing the zest rolled in plastic wrap in my freezer. Then if I need some I can pinch off as much as the recipe calls for. I started doing this when I realized so many recipes will call for the zest and not the juice of whatever citrus flavor is involved. This really comes in handy around the holidays when I am baking multiple batches of cookies, cakes, etc.

Well….with a bit of effort and not too much time or complication with the mixing, I soon had a lovely dough that only had to chill for 30 minutes before rolling into balls and pressing on parchment covered cookie sheets. The aroma that filled the kitchen was tantalizing.

I am going to include the recipe here, along with another that has long been a favorite and even is a request cookie of mine from friends and family alike-White Chocolate Orange Dreams, a perfectly addictive little cookie that is surprisingly reminiscent of those ice cream treats, Creamsicles. Do you remember them? They were pretty little orange flavored Popsicle with a creamy ice cream center.  My husband absolutely loved those and although he nor I are wild about white chocolate chips, these cookies are too good not to eat.

But first I want to show you what I did with the cookies after I baked them. Since this was to be a gift, I wanted to package them a little more specially for my friend, so I thought a Margarita glass would do nicely. Here is what I ended up with!

It was fun and of course there was plenty for my cookie monster hubby. He usually likes to hang around for all the “broken casualties” which he gobbles up as a prelude to the main cookie course; but these cookies bake up superbly without crumbling. I am certain they will become a regular part of my holiday baking regimen.

The dough, once chilled, is rolled into balls and dipped into a mixture of sugar and salt before being placed on the cookie sheet.  I chose to flatten mine with some stamps that I remembered having from a set I purchased awhile ago. See, the old brain is still humming along…:0! The coating does indeed give a nice flavor finish and isn’t too salty. I prefer no salt on my frozen margaritas but this was just enough.

And of course I must thank those friends who helped me with this production-Mr. Jose Cuervo and Grand Marnier, the master of our Margarita ceremonies. The recipes all called for Triple Sec, but my husband prefers the smooth taste of this liqueur much more. It’s actually good in so many things, including coffee!

With everyone doing their part and a good audience, this production went off without a hitch and received rave reviews. I hope you do as well with your own performance. Do try the Orange Dream recipe also. It is a bit sweeter but just as tasty.

There were several variations on the internet of this same recipe and most had similar ingredients. This one appealed to me due to the fact that it didn’t require shaping before chilling or rolling which was  a real time saving point for me. I did use the stamp with mine.

Margarita Cookies

2 1/4 c. flour ( you can sub a bit of barley flour if you like but other flours won’t lend the firm tenderness like you get with all purpose. I used unbleached.

3/4 c. sugar

zest of 2 lemons, zest of 1 lime, zest of 1 orange

1 egg yolk

1 c butter, room temperature

2 tsp tequila

2 tsp orange flavored liqueur ( I used Grand Marnier)

1/4 tsp salt

1/4 raw sugar

1 tsp course sea salt

In mixer, cream butter and sugar until fluffy.  Mix in egg yolk and the zests.  Mix well.

Add tequila, liqueur, and salt.

Gradually add flour, mixing until well combined.

Cover dough with plastic and refrigerate for 30 minutes.

Preheat oven 300.  Mix raw sugar and salt. Shape chilled dough into small rounds and roll in sugar/salt mixture before placing on parchment paper lined cookie sheets. Flatten with fork or bottom of a glass or with decorative cookie press.  Bake 15 min, or until edges begin to brown. I have a hot oven so 12 min was perfect for me. I suggest setting your timer short and checking them to set the bar for the rest of your batches. With the size cookies I made, the recipe yielded 2 1/2 dozen-plus one! Cool on wire rack. Yummy!

Here is the second recipe.

White Chocolate Orange Dream Cookies

1 cup butter, softened

2/3 cup packed brown sugar

1/3 cup white or organic sugar

1 large egg

1 Tbsp grated orange rind

2 tsp orange extract

2 1/4 cups all purpose flour

3/4 tsp baking soda

1/2 tsp sea salt

2 cups white chocolate chips

Beat first 3 ingredients on medium speed of electric mixer until creamy.  Add egg, orange peel, and extract.  Beat until blended.

Combine flour, baking soda, and salt.  Gradually add to sugar mixture, beating just until blended after each addition.  Stir in white chips.  Drop by rounded tablespoonfuls onto ungreased baking sheets. (I still spray with a bit of non stick coating)

Bake 350 10-12 minutes or until edges are lightly browned.  Cool on baking sheets 2 minutes then remove to wire racks to cool. 3 1/2 dozen.

I’m sorry I don’t have any photos of these. My family usually gobbles them up too fast! haha.
